Class Descriptions

          5 Ingredients or Less
 
For those of you that hate to shop and/or cook, have little time, but realize a box of processed food is probably not the best way to go. We will limit these dishes to as few items as possible. Make prepping, measuring and planning as simple as we can and still deliver delicious, healthier foods.
 
 
Asian Cooking

 Pretty broad strokes on the menu for this one but, for instance, Stir fry, Fried Rice, Won Tons, Generals Tao's chicken, Japanese Tempura, Spring Rolls, Ming's Master Sauce and some oriental noodles. We won't restrict ourselves to a set menu but you can bet some of your favorites from the Chinese Buffet will be there.    

 

Baking

Basic Bread baking, soft pretzels, cookies, cinnamon rolls. I spent a week baking with Karen Guse of Wild Mountain Bakery at her new bakery in Kentucky. I want to share those recipes with you since we can’t get her products here anymore. She had a Bakery on High Street in Morgantown for a few years but they had to move and we miss her. So I guess we’ll have to make it ourselves, come on out and let’s do this! This class may exceed the 3 hours as dough takes time to rise.    

 

Breakfast

Learn to make great breakfast and eat it anytime of day. Pancakes and waffles from scratch, eggs of all kinds, biscuits and gravy, and breakfast sweets. Look like you have done it for years. We waste lots of eggs here until you get it right.  


 

Busy Mom Dishes

Do you have those days when dinner is the last thing you have time for? This class concentrates on having something in the frig that can be complete in a moment with or without you and, without giving up taste and healthy nutrition.  

          
 
Cajun Cuisine

Louisiana Style foods. Jambalaya, Cajun Crawfish Etouffe, Beignets, Gumbo, Red Beans and Rice, Corn Maque Choux and Cajun Shrimp Orecchiette. We’ll see what else develops as we weave down south in this class. Get out of your rut and try these recipes out…Guaaarreenteed Good!!!
          
 
Carribbean Cooking

The sun drenched Caribbean has its own cuisine and you can easily produce it at your house. Jerk things, fish, Plantains, Key Lime Pie, and whatever else we can come up with. Ever had a Cuban Sandwich? Come on in and add some new dishes to your repertoire.

          
 

  Comfort Food

Home cooking at its best. Chicken Fried Steak, cobblers, Fried Chicken, Homemade Biscuits, fast Mac-n-Cheese to name a few. You get the idea. This is what you wish you had every night. 

 

 Date Night 1

Take a night out, quality time and some fabulous food. We will be making Bruschetta, Cast Iron Steak, Shrimp Risotto, Spring Salad w/Balsamic Dressing, Yeast Rolls, Chicken French, and Chocolate Mousse. Please note that this is a $70.00 per person class. 

 Date Night 2

Bacon Wrapped Jalapenos’,Scallops Coquilles Saint-Jacques, Homemade Chicken Pot Pie, Beef Stroganoff, Asparagus w/Hollandaise sauce, Brussel Sprouts & Bacon w/ Caramelized onion, and Chocolate Kahlua Cake. Please note that this is also a $70.00 per person class.

 Famous American Regional recipes

Maryland Crab Cakes, New Orleans Gumbo, SanFran’s Ricearoni from scratch, Michigan Pasties, WV Pepperoni Rolls ( these are Mountaineer Bakery ones from Karen Guse, the best) and NY State Speedies.  Hard to find dishes, unless you go to the area they are from. The reason they are famous?  WAAAAAYYY Good! An ambitious array of food. Let’s do it!

 

Fast and Easy Meals for people on the go!

Busy lifestyle got you going to fast food restaurants or eating processed foods from store shelves? Come learn and prepare some fabulous recipes and get organized to prepare your own healthy meals in minimum time. You should not have to shop more than once a week to be ready.  

 

Fish

Fish is NOT meat, so why do people try to cook it that way?  Cooking fish is one of the healthiest ways to eat. It scares a lot of folks in the kitchen and at restaurants it is usually overcooked. Come learn how not to do that and stop being afraid of it. It’s fast and easy with a few simple techniques.  

 

French Cooking

Lets make some crepes, cook with wine and throw in some butter and eggs. This class will cover classic French recipes with names that are hard to pronounce but fun, delicious; and, here's the secret, its not hard to do. We will make some desserts, appetizers and entrees that are sure to please your family. 

Grilling/Tailgating

You will be cooking outside on the grill for this class. Meats, Vegetables, seafood and whatever else we can think of. Fear the grill no more and get some great ideas for that next tailgate event making you the envy of the parking lot on game days. I'll get the food, fire up the grills and let you go to it with me behind you, fire extinguisher in hand. Please note that this is a 65.00 per person class.  

German Foods

Rich and hearty, German food is unique. Jägerschnitzel, Brotchen (Rolls), Warm German Potato Salad, Dutch Babies (German Pancake), Kraut & Sausage Casserole, Apple Strudel, Rührei (weird scrambled eggs), Zwiebelkuchen (savory onion cake) and Green Beans, Bacon & Spaetzle.

Hors d'Oeuvres

Learn how to prepare mouth watering hors d'oeuvres for the coming holidays and parties. We will cover both warm and cold snacks, with meats, fish, cheese and vegetables. This is what you need to “Wow” your guests or take to that potluck dinner.

 

 Indian Cuisine

The cuisine of India is one of the world's most diverse cuisines, characterized by its sophisticated and subtle use of the many spices, vegetables, grains and fruits grown across India. Let’s cook some Naan, Chicken Tikka Masala, Saag Paneer, Pakoras, Raita and a few others.

 

 Kickin it with Keto

The big new/old thing now is LOW CARB. We have some great recipes for main entrees, gravies, pizza and snacks. We will even have a dessert or two staying away from sugars and other carbs. You will be surprised how easy and satisfying this style of eating is. Quit putting it off or on the back burner, c'mon out and let's do this thing!!  


 

Kids in the kitchen, Fun-dah-mental

Designed for young people 8-12 years of age -- get them in the kitchen with some easy and healthy recipes, as well as some cookies. It’s gonna get messy, so do it at My Kitchen. Adults may stay or drop them off and pick them up later. They will be fed.

 

Kitchen Basics

If you are just getting started cooking and are overwhelmed with all the skills and things you are being told you need, this is the class for you. In 3 hours you will know what you really need, get some knife skill, and know what to have on hand. Let’s keep this as simple as we can and cook a few things as well. Come hungry. 

            

 Light, Fast, and Delicious

Learn some cooking techniques for low fat cooking and prepare great recipe ideas. Low fat should not be tasteless. Planning is everything. C’mon you can do it!!!! 

 

Mediterranean Dishes

In this class we will make Tzatziki and Gyros Including the Pita wrap from scratch. Make your own Greek Gyros at home people will stalk you for. It isn’t that hard and we have some local farmers and stores to provide you with the lamb. Tabouli & Hummus and Stuffed Grape leaves will also be on the menu. Mediterranean dishes are healthy and an escape from hum drum cooking. 

          

Northern Italian Cooking

Just because its Italian doesn’t mean pasta or spicey. Northern Italian food is rich, comfort, nourishing mountain food. Its fresh ingredients readily available for that region meant to strengthen and fuel in a sometimes more hostile environment that its southern tier members. Highly influenced by its  German neighbor.  

          

 Pasta

Let’s make our own fresh pasta from scratch. We’ll make some ravioli with a couple fillings and some noodles as well as spaghetti. A couple of sauces and maybe some bread and we can eat until we hate ourselves.  


Pizza

Need I say more? Fat and thin pizza, sauce, no sauce, dessert pizza... just pizza.

 Rotisserie Chicken Recipes

We use and have used store-bought rotisserie chicken at our house for decades. Sure does get old though to have it plain. Let’s rip some up and make some nice healthy side dishes as well. Soup, casseroles, bakes, pie, pizza and skillets. Get out of the plain ole rut and shake things up with your family. Half your dinner and left-over work is done with this staple. 


 

Soups

You will be making hot and cold soups. What better way to use up those leftovers, feed folks in a healthy flavorful way and stay trim and healthy. Soups also make for meals to can be ready in a flash.  Come make some.

 

Southern Italian Cooking

Discover the cooking of southern Italy. These simple foods are full of culinary surprises and are simple to prepare. Citrus and spices highlight these recipes and we make our own Pasta. 

 

Sushi

Sushi is easy and it does not mean raw fish. I teach children how to make Sushi…so you can certainly do it. Why spend tons of money on prepared ones from store when you can make your own. We use fresh healthy ingredients and the sky’s the limit on the variations. A lot of Sushi contains no fish at all. 

 

Tex- Mex Foods

I don’t know about you but I object to paying $10 for $2 worth of food that is not hard to get or make. Let’s put this together into it’s easy pieces and have it available to you and your family all the time. Simple sauces and ingredients for that OMG food we stand in line for but could make at home if we just took the time to learn it.

Thai Cooking

Learn to do Thai dishes at home. This food can be spicy or not, always a delight. Pad Thai, Curry, Meats, Coconut Soup, Stir Fry Sauces and Sticky Rice. Thai food is much better when it hasn’t been being held in a restaurant environment; make it fresh in your own kitchen. You will walk out of class with the knowledge of making these distinctive tastes, you will also be stuffed as with all my classes. . 

 

Thanksgiving/Christmas Dinner

Whatever the special holiday may be Thanksgiving, Christmas or Easter. This meal is a must with all the trimmings. It includes: Turkey, Stuffing, Green Bean Casserole, Cranberry Sauce, Sweet Potato Casserole, Mashed Potatoes w/Gravy, Yeast Rolls and a Cream Pie. We will knock this out in a little over 2 hours, (including Turkey) from scratch.
